  • 2 cups chicken broth

  • 1 cup diced carrots
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by chopping the onion and garlic.
  2. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until fragrant and golden (about 5 minutes).
  3. Add chicken thighs to the skillet, seasoning generously with salt, pepper, and paprika. Brown on both sides (about 6 minutes).
  4. Stir in rinsed rice and chicken broth. Bring to a boil, then reduce heat to low and cover tightly.
  5. Simmer for 20 minutes without lifting the lid.
  6. After 20 minutes, add diced carrots, cover again, and cook for another 5 minutes until carrots are tender.
