  • 2 ripe avocados (about 300g)
  • 1 cup cherry tomatoes, halved (150g)
  • 1 cup cucumber, diced (150g)
  • 1/4 red onion, thinly sliced (40g)
  • 1/4 cup fresh cilantro, chopped (10g)
  • 2 tbsp lemon juice (30ml)
  • 2 tbsp extra virgin olive oil (30ml)
  • Salt and pepper to taste

Instructions

  1. Gather and wash all ingredients. Chop the cilantro finely.
  2. Halve the avocados, remove the pit, and scoop the flesh into a large mixing bowl. Dice the avocados into bite-sized pieces.
  3. Add cherry tomatoes and cucumber to the bowl. Toss gently to combine.
  4. Thinly slice the red onion and add it along with chopped cilantro.
  5. Squeeze fresh lemon juice over the mixture and drizzle with olive oil.
  6. Season with salt and pepper, tossing gently until evenly coated.
  7. Serve immediately in a platter or individual bowls.
