  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 1 tbsp balsamic vinegar
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary

Instructions

  1. Prepare all ingredients by chopping onions, carrots, and celery.
  2. In a large pot, heat olive oil over medium-high heat. Season beef short ribs with salt and pepper and sear until browned on all sides (3-4 minutes per side). Remove from pot.
  3. Add onions, carrots, and celery to the pot; sauté for about 5 minutes until softened. Stir in garlic and cook for an additional minute.
  4. Pour in the red wine to deglaze the pot, stirring for about 2 minutes until reduced by half.
  5. Return the short ribs to the pot along with beef broth, thyme, rosemary, and balsamic vinegar. Cover and simmer on low heat for about 3 hours until fork-tender.
  6. Carefully remove ribs from pot; optionally reduce sauce over high heat until thickened before serving.
