  • 2 cups fresh ripe plums, pitted and sliced
  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, chilled and cubed
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 egg yolk (for brushing)

Instructions

  1. 1. In a large bowl, whisk together flour, granulated sugar, and salt. Add chilled butter cubes and rub into the flour until it resembles coarse crumbs.
  2. 2. Gradually add ice water until a dough forms. Shape into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. 3. Slice plums and toss with brown sugar, cinnamon, and salt in another bowl.
  4. 4. Roll out the chilled dough on a floured surface into a rough circle (about 12 inches wide).
  5. 5. Transfer the dough to parchment paper on a baking sheet, pile the plum mixture in the center, and fold the edges over the filling.
  6. 6. Brush crust edges with egg yolk and bake at 375°F (190°C) for 35-40 minutes until golden brown.
