  • 4 large bell peppers (any color)
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice (white or brown)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove seeds.
  3. Heat olive oil in a skillet over medium heat; sauté onions and garlic until translucent.
  4. Add ground meat to the skillet and cook until browned; drain excess fat.
  5. Stir in cooked rice and tomato sauce; simmer for 5 minutes.
  6. Stuff each pepper with the meat mixture and place upright in a baking dish. Top with shredded cheese.
  7. Cover with foil and bake for 25 minutes; uncover and bake for an additional 10 minutes until cheese is bubbly.
