  • 4 cups low-sodium chicken or vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves fresh garlic, minced
  • 1 medium onion, finely diced
  • 2 tbsp unsalted butter
  • ½ cup dry white wine (optional)
  • 1 cup of your favorite vegetables or proteins (e.g., peas, mushrooms, shrimp)

Instructions

  1. Prepare your ingredients by chopping onions and garlic finely.
  2. In a large skillet over medium heat, melt the butter and add the onions; sauté until translucent. Add garlic and cook briefly until fragrant.
  3. Stir in Arborio rice until each grain is coated in butter; toast for about 2 minutes.
  4. If using wine, pour it in now and stir until absorbed.
  5. Gradually add warm broth one ladle at a time, stirring continuously and allowing liquid to absorb before adding more, for about 18-20 minutes until rice is al dente and creamy.
  6. Finish with Parmesan cheese and an extra pat of butter; season to taste before serving.
