  • 2 lbs beef chuck roast, cubed
  • 1 cup pearl barley
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 1 onion, diced
  • 4 cups low-sodium beef broth
  • 3 cloves garlic, minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup red wine (optional)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the cubed beef until browned on all sides (6-8 minutes).
  2. Add onions, carrots, celery, and garlic; sauté until onions are translucent (about 5 minutes).
  3. Pour in the beef broth and red wine (if using). Scrape up any browned bits from the bottom of the pot.
  4. Stir in the pearl barley, bay leaves, thyme, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low; cover and let simmer for 1.5 to 2 hours until the beef is tender.
  6. Taste and adjust seasoning before serving. Remove bay leaves before ladling into bowls.
