  • 1 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • 1/4 cup fresh parsley (chopped)
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup long-grain white or brown rice
  • 2 cups chicken broth
  • 2 cups tomato sauce

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, pepper, and parsley until just combined.
  2. Roll mixture into 1-inch meatballs.
  3. Heat olive oil in a skillet over medium heat; sear meatballs until browned on all sides (about 5 minutes).
  4. Pour tomato sauce over meatballs; reduce heat to low and simmer covered for 20 minutes.
  5. In another pot, bring chicken broth to a boil; stir in rice and cover tightly. Cook until liquid is absorbed (15-20 minutes).
