3–4 boneless, skinless chicken breasts (1 lb)
2 cloves fresh garlic, minced
1 medium yellow onion, chopped
2 cups mixed vegetables (fresh or frozen)
1 can (10.5 oz) cream of chicken soup
1 cup shredded cheddar cheese
½ cup toasted breadcrumbs
2 tbsp olive oil
Salt, pepper, and Italian herbs to taste
Instructions
Preheat oven to 375°F (190°C).
In a large skillet over medium heat, drizzle olive oil. Add onions and garlic; sauté until fragrant and translucent (about 3 minutes).
Add cubed chicken; cook until lightly browned.
Stir in mixed vegetables and cream of chicken soup; mix until well combined (about 2 minutes).
