  • 2 cups pumpkin (fresh or canned)
  • 1 can (14 oz) full-fat coconut milk
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 cup low-sodium vegetable broth
  • 2 cups spinach or kale
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat 1 tbsp of oil over medium heat. Sauté diced onions until translucent (about 5 minutes).
  2. Add minced garlic and grated ginger; sauté for another minute.
  3. Stir in cubed pumpkin and curry powder; cook for 2 minutes.
  4. Pour in coconut milk and vegetable broth, stirring well. Bring to a simmer.
  5. Reduce heat and let simmer for 20 minutes until pumpkin is tender.
  6. Add spinach or kale; cook for an additional 3 minutes until wilted. Finish with lime juice and season with salt and pepper.
