Ingredients

Scale
  • 4 cups fresh pumpkin, cubed (sugar pumpkin recommended)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Wash and peel the sugar pumpkin, cut into cubes, and remove seeds. Chop the onion and garlic; grate the ginger.
  2. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add chopped onion; sauté until translucent. Stir in garlic and ginger until fragrant.
  3. Add pumpkin cubes: Combine cubed pumpkin with cinnamon, nutmeg, salt, and pepper. Stir to coat evenly.
  4. Pour in broth & simmer: Add vegetable broth until the pumpkin is submerged. Bring to a boil then reduce heat to simmer for about 20 minutes or until tender.
  5. Blend until smooth: Use an immersion blender or transfer to a regular blender to puree the soup until silky-smooth. Adjust thickness with additional coconut milk or broth if desired.
  6. Final touches & serve warm: Stir in coconut milk; adjust seasoning as needed. Serve hot garnished with roasted pumpkin seeds or a drizzle of coconut milk.
