  • 2 tablespoons olive oil
  • 4 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut each acorn squash in half lengthwise and scoop out the seeds.
  3. Drizzle olive oil inside each half and season generously with salt, pepper, and cinnamon.
  4. Pour maple syrup into the center of each squash half.
  5. Place cut-side down on a lined baking sheet and roast for 30–40 minutes until tender.
