Boursin Pasta is a creamy, dreamy dish that combines rich Boursin cheese with tender pasta and vibrant veggies for a flavor-packed experience.   • 8 oz fettuccine pasta
  • 1 package (5.2 oz) Boursin cheese (garlic & herb)
  • 2 tbsp olive oil
  • 2 cups fresh baby spinach
  • 1 cup cherry tomatoes, halved
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente; reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Sauté minced garlic for about 1 minute until fragrant, then add spinach and cook until wilted.
  3. Stir in halved cherry tomatoes and cook for another 3-4 minutes until softened.
  4. Lower the heat and add Boursin cheese, stirring until melted and creamy.
  5. Add drained pasta to the skillet along with reserved pasta water as needed for creaminess. Toss well to combine.
  6. Finish by sprinkling grated Parmesan on top and season with salt and pepper before serving.
