Ingredients

Scale
  • 4 cups fresh broccoli florets (about 1 large head)
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 cups sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • Optional toppings: croutons or extra cheese

Instructions

  1. Prep your ingredients by washing the broccoli and chopping it into bite-sized florets. Finely chop the onion and mince the garlic.
  2. In a large pot over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic until fragrant.
  3. Add the broccoli florets to the pot and pour in the vegetable broth until covered. Bring to a gentle boil and simmer for 10-15 minutes until the broccoli is tender.
  4. Reduce heat and stir in heavy cream slowly while mixing continuously until combined.
  5. Gradually add shredded cheddar cheese, stirring constantly until fully melted. Adjust salt and pepper to taste.
  6. For a creamier texture, blend part of the soup with an immersion blender if desired.
  7. Serve warm with optional toppings like croutons or extra cheese.
