  • 1 cup dried butter beans (or 2 cans, drained and rinsed)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp extra virgin olive oil
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 tsp fresh rosemary (or ½ tsp dried)
  • Salt & pepper to taste

Instructions

  1. If using dried butter beans, soak them overnight in water. Drain and rinse before cooking.
  2. In a large pot over medium heat, add olive oil. Sauté chopped onions until translucent.
  3. Add minced garlic, thyme, and rosemary; cook until garlic is golden brown.
  4. Stir in the butter beans and pour in vegetable broth to cover the beans.
  5. Bring to a gentle boil, then reduce heat to low and simmer for about 30 minutes or until beans are tender.
  6. Season with salt and pepper to taste. Serve hot with crusty bread or over rice.
