  • 4 boneless, skinless chicken breasts (approx. 1.5 lbs)
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • Salt & pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium heat. Sear chicken for 5-7 minutes on each side until golden brown; remove from skillet.
  2. In the same skillet, sauté onions and garlic until translucent (about 3 minutes).
  3. Stir in the long-grain rice, coating it with the onion-garlic mixture. Pour in chicken broth and bring to a simmer. Return the seared chicken to the pan.
  4. Lower heat after simmering, add heavy cream and thyme, stirring gently until combined.
  5. Fold in frozen peas, allowing to simmer for an additional 5-10 minutes until the rice absorbs the creamy sauce.
