  • 4 cups fresh corn (about 6 ears)
  • 2 medium Yukon Gold potatoes, diced
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ½ cup crispy bacon bits (optional)

Instructions

  1. 1. Shuck the corn and cut the kernels off the cob. Dice the potatoes and finely chop the onion and garlic.
  2. 2. In a large pot over medium heat, melt the butter. Add onions and garlic; sauté until translucent (about 3–4 minutes).
  3. 3. Stir in diced potatoes and vegetable broth; bring to a boil. Reduce heat and simmer for 10–15 minutes until potatoes are tender.
  4. 4. Add corn kernels to the pot; simmer for another 5–7 minutes.
  5. 5. For a creamier texture, blend half of the chowder with an immersion blender before adding heavy cream.
  6. 6. Stir in heavy cream, season with salt and pepper, and serve hot.
