  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Cut the chicken breasts into bite-sized pieces.
  2. Set up a breading station with one bowl of seasoned flour (flour mixed with salt, pepper, and garlic powder), one bowl with beaten eggs, and another with panko breadcrumbs.
  3. Dredge each chicken piece in flour, then dip in the egg wash, and finally coat thoroughly in breadcrumbs.
  4. Heat enough vegetable oil in a skillet to cover the bottom (about ½ inch deep) over medium-high heat until shimmering.
  5. Fry the nuggets in batches for 4-5 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F).
  6. Transfer cooked nuggets to paper towels to drain excess oil before serving.
