  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 3 garlic cloves, minced
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp baking powder
  • Salt and pepper to taste
  • Vegetable oil for frying

Instructions

  1. Soak the dried chickpeas in water overnight or for at least 8 hours.
  2. Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, parsley, cilantro (if using), garlic, cumin, coriander, salt, and pepper. Pulse until you achieve a coarse paste.
  3. Transfer the mixture to a bowl and gently fold in baking powder.
  4. Shape the mixture into small balls or patties about 1-2 inches in diameter.
  5. Heat vegetable oil in a deep skillet over medium heat until it reaches 350°F (175°C).
  6. Fry the falafel in batches until golden brown on all sides, approximately 4-5 minutes per batch. Drain on paper towels before serving.
