  • 1 lb fresh salmon fillet
  • 1 cup breadcrumbs (preferably panko)
  • 3 green onions, chopped
  • 2 large eggs
  • 1/4 cup mayonnaise
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp Old Bay seasoning
  • 2 tbsp olive oil (for cooking)

Instructions

  1. Preheat your oven to 350°F (175°C). Cook the salmon fillet until opaque and flaky, about 15 minutes. Let it cool.
  2. In a bowl, flake the cooled salmon into small pieces. Add breadcrumbs, green onions, eggs, mayonnaise, lemon juice, Dijon mustard, and Old Bay seasoning; mix well.
  3. Form the mixture into patties about 3 inches wide and 1 inch thick.
  4. Heat olive oil in a skillet over medium heat. Cook patties until golden brown on both sides (approximately 4-5 minutes per side).
  5. Transfer cooked cakes to a plate lined with paper towels and serve warm with your favorite dipping sauce.
