  • 1 cup plain breadcrumbs (or panko for extra crunch)
  • 2 large eggs, beaten
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 2 tbsp fresh dill or parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp lemon juice
  • 2 tbsp olive oil (for frying)

Instructions

  1. In a large bowl, flake the drained salmon with a fork. Add breadcrumbs, beaten eggs, onion, garlic powder, herbs, lemon juice, salt, and pepper. Mix until combined.
  2. Shape the mixture into small patties about 2 inches wide.
  3. Heat olive oil in a non-stick skillet over medium heat until shimmering.
  4. Cook patties in batches for about 4-5 minutes on each side until golden brown and crispy.
