  • 4 firm cucumbers (Kirby recommended)
  • 1 cup distilled white vinegar
  • 1/4 cup sugar
  • 2 tbsp salt (non-iodized)
  • 2 cups water
  • 2 sprigs fresh dill (or 1 tsp dried dill)
  • 3 garlic cloves, smashed
  • 1 tsp mustard seeds
  • 1 tsp peppercorns

Instructions

  1. Wash cucumbers thoroughly. Cut off ends and slice into spears or rounds as desired.
  2. In a saucepan over medium heat, combine vinegar, water, sugar, and salt. Stir until dissolved and simmer for about 5 minutes.
  3. Add garlic, dill, mustard seeds, and peppercorns to the brine mixture. Let it bubble gently for another 5 minutes.
  4. Sterilize jars and pack them tightly with cucumber slices. Pour hot brine over cucumbers until fully submerged.
  5. Seal jars tightly while still hot and let them cool at room temperature before refrigerating.
  6. Allow at least 24 hours for pickles to develop flavor before enjoying.
