  • 1/2 cup uncooked long-grain white rice
  • 4 cloves fresh garlic, minced

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups low-sodium chicken broth
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Chop onions, mince garlic, and dice carrots and celery.
  2. In a bowl, combine ground beef, rice, garlic, onion, salt, and pepper gently until just combined.
  3. Heat olive oil in a pot over medium heat; add carrots and celery and sauté for about 5 minutes.
  4. Pour in chicken broth and diced tomatoes; bring to a gentle simmer.
  5. Roll the meatball mixture into small balls (about 1 inch) and drop them into the simmering broth. Cook for approximately 15 minutes or until they float to the top.
