  • 4 large flour tortillas
  • 6 large eggs
  • 4 strips bacon (or turkey bacon)
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onions
  • 1/2 cup salsa or hot sauce (optional)
  • Fresh cilantro, chopped (optional)

Instructions

  1. Cook bacon in a skillet over medium heat until crispy (about 5-7 minutes). Remove and chop into pieces.
  2. In the same skillet, whisk eggs with salt and pepper. Pour into the skillet and scramble until fluffy.
  3. Add diced bell peppers and onions to the egg mixture, cooking for an additional 1-2 minutes.
  4. Lay tortillas out on plates. Spoon the egg mixture onto each tortilla, top with cheese and optional toppings.
  5. Fold sides of tortillas over fillings and roll tightly.
