  • 2 medium carrots, diced
  • 2 stalks celery, diced

  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with juices
  • 4 cups low-sodium vegetable broth
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Sauté onions and garlic until fragrant and translucent (about 5 minutes).
  2. Add chopped cabbage, carrots, celery, diced tomatoes, vegetable broth, thyme, salt, pepper, and bay leaves. Bring to a gentle boil.
  3. Reduce heat to low and cover. Simmer for about 30 minutes until all vegetables are tender.
  4. Remove bay leaves. Adjust seasoning as needed. Stir in lemon juice before serving.
