  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 9 no-boil lasagna noodles
  • 15 oz ricotta cheese
  • 3 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach (or 10 oz frozen spinach)
  • 2 cups marinara sauce
  • 3 garlic cloves, minced
  • 1 tsp dried Italian herbs (basil, oregano, thyme)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). In a skillet over medium heat, heat olive oil and sauté garlic until fragrant. Add diced chicken and cook until golden brown, about 7-10 minutes.
  2. In a bowl, mix ricotta cheese with drained spinach, half of the Parmesan, salt, pepper, and Italian herbs until smooth.
  3. Spread a thin layer of marinara sauce in a baking dish. Layer noodles, half of the ricotta mixture, more marinara sauce, and a sprinkle of mozzarella.
  4. Repeat layers with remaining ingredients finishing with noodles topped with marinara and extra mozzarella and Parmesan.
  5. Cover with foil and bake for 30 minutes. Remove foil during the last 15 minutes for a golden crust.
