  • 1 (15 oz) can chickpeas, drained and rinsed
  • 1 cup celery, chopped
  • 1/4 cup red onion, finely chopped
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1/4 cup mayonnaise (or vegan mayo)
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (optional)

Instructions

  1. Drain and rinse the chickpeas. Chop the celery and red onion.
  2. In a large bowl, mash half of the chickpeas using a fork or potato masher.
  3. Add the chopped celery and red onion to the mashed chickpeas.
  4. Squeeze in fresh lemon juice, then add Dijon mustard and mayo. Mix until well combined.
  5. Season with salt and pepper to taste. Fold in parsley if using.
  6. Serve immediately or let sit in the refrigerator for at least 30 minutes before serving for enhanced flavors.
