  • 4 boneless, skinless chicken breasts (about 1.5 lbs), cut into bite-sized pieces
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 can (13.5 oz) full-fat coconut milk
  • 2 tbsp curry powder
  • 1 inch fresh ginger, grated
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 1 tbsp tomato paste
  • Juice of 1 lime

Instructions

  1. Heat the vegetable oil in a large pan over medium heat. Sauté the chopped onion until golden brown, about 5 minutes.
  2. Add minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.
  3. Increase heat slightly and add the chicken pieces, cooking until white on all sides (about 5-7 minutes).
  4. Stir in curry powder and tomato paste; cook for another minute.
  5. Pour in coconut milk and chicken broth, stirring to combine. Bring to a gentle simmer.
  6. Let simmer on low heat for 15-20 minutes until thickened, stirring occasionally.
  7. Just before serving, stir in lime juice and season with salt and pepper to taste.
