  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 2 bell peppers (any color), diced
  • 3 medium carrots, sliced
  • 2 tbsp tomato paste
  • 4 cups low-sodium beef broth
  • 2 tsp sweet paprika
  • 1 tsp dried oregano
  • 2 bay leaves
  • Salt and pepper to taste
  • 8 oz egg noodles (optional)

Instructions

  1. Chop the onions and mince the garlic; dice bell peppers and slice carrots.
  2. In a large pot over medium-high heat, sear the beef chuck until browned on all sides.
  3. Add chopped onions and minced garlic; sauté until onions are translucent (about 5 minutes).
  4. Stir in bell peppers, carrots, tomato paste, beef broth, paprika, oregano, bay leaves, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low, cover, and simmer for 1-2 hours until beef is fork-tender. Stir occasionally.
  6. If using pasta, cook separately per package instructions; serve goulash hot over or alongside noodles.
