  • 1 cup bell peppers, sliced
  • 1 cup cucumbers, julienned
  • 1 cup fresh basil leaves
  • 1 cup fresh mint leaves
  • 1 cup cooked shrimp or tofu
  • ½ cup peanut butter (for dipping sauce)
  • 2 tbsp soy sauce (for dipping sauce)
  • 1 tbsp honey (for dipping sauce)

Instructions

  1. Prepare your ingredients by washing and slicing all vegetables into thin strips. Set aside fresh herbs.
  2. In a shallow dish, fill warm water and dip each rice paper wrapper for about 10-15 seconds until slightly softened.
  3. Lay the softened wrapper flat on a clean surface. Add a handful of veggies, herbs, and protein in the center without overstuffing.
  4. Fold the sides over the filling and roll tightly from the bottom up to enclose the filling securely.
  5. For the dipping sauce, mix peanut butter, soy sauce, and honey in a bowl until smooth.
