  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups vegetable broth
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon ground cumin
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. 1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes).
  2. 2. Stir in minced garlic, cumin, and bay leaf; cook for an additional minute.
  3. 3. Add the rice, stirring well to coat each grain. Toast for about 2 minutes until slightly golden.
  4. 4. Pour in vegetable broth, scraping any bits from the bottom of the pot. Bring to a boil, then reduce heat to low and cover tightly.
  5. 5. Simmer for 15-20 minutes until all liquid is absorbed. Remove from heat and let it rest covered for another 5 minutes.
  6. 6. Fluff the rice gently with a fork before serving.
