Instructions

  1. Prepare the shrimp: Rinse under cold water, pat dry, season with salt, and cook in a skillet over medium heat until pink and opaque (about 2-3 minutes per side). Let cool.
  2. Soak rice paper wrappers: Dip each wrapper in warm water for 10-15 seconds until soft but not mushy.
  3. Assemble the rolls: Lay a soaked wrapper flat; place shrimp, lettuce, carrots, cucumber slices, and herbs along the bottom third.
  4. Roll tightly: Fold sides over filling then roll from the bottom up until sealed. Repeat with remaining ingredients.
