  • 2 lbs fresh tomatoes (Roma or San Marzano)
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Wash tomatoes thoroughly and remove stems. Cut into quarters.
  2. In a large pot over medium heat, add olive oil. Once hot, sauté onions until translucent (3-5 minutes). Add minced garlic and cook until golden.
  3. Stir in quartered tomatoes along with salt and pepper. Cook for 20 minutes until tomatoes soften and juices release.
  4. Blend the mixture to your desired texture using an immersion blender or regular blender.
  5. Return to low heat, add fresh basil, and simmer for an additional 10-15 minutes. Adjust seasoning as needed.
  6. Serve over pasta or use as a pizza base.
