  • 4 boneless, skinless chicken breasts
  • 12 oz fettuccine or penne pasta
  • 1 cup pesto sauce (store-bought or homemade)
  • 1 cup cherry tomatoes, halved
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat. Cook chicken for 6-7 minutes per side until golden brown and fully cooked.
  2. In a large pot, boil salted water and cook pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  3. Return drained pasta to the pot. Stir in pesto sauce, gradually adding reserved pasta water until desired creaminess is achieved.
  4. Slice cooked chicken into strips and fold into the pasta along with halved cherry tomatoes.
  5. Serve immediately, topped with freshly grated Parmesan cheese.
