  • 4 boneless, skinless chicken breasts (about 680g)
  • 4 cloves fresh garlic, minced
  • 2 chipotle peppers in adobo sauce, chopped
  • 1 can (14.5 oz or 411g) fire-roasted diced tomatoes
  • 1 medium yellow onion, diced
  • Juice of 2 limes
  • 1 cup low-sodium chicken broth (240ml)
  • 2 tbsp olive oil

Instructions

  1. Prepare your ingredients by dicing the onions and mincing the garlic.
  2. In a large skillet over medium heat, warm olive oil and sauté onions until translucent (about 5 minutes). Add garlic and cook until fragrant.
  3. Add chicken breasts to the skillet along with diced tomatoes, chipotle peppers, chicken broth, lime juice, salt, and pepper. Stir to combine.
  4. Bring to a gentle boil, then reduce heat and cover to simmer for about 25 minutes until the chicken is cooked through.
  5. Remove the chicken from the skillet and shred using two forks before returning it to the sauce.
  6. Serve warm as tacos or over rice, garnished with cilantro or avocado slices if desired.
