  • 1 lb boneless chicken thighs
  • 1 lb Andouille sausage
  • 1 lb shrimp (peeled and deveined)
  • 2 bell peppers (mixed colors, diced)
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium chicken broth
  • 2 cups long-grain rice
  • 2 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced chicken thighs, season with salt and pepper, and cook until browned (about 5 minutes).
  2. Add sliced sausage to the pot; cook until golden brown.
  3. Stir in onions, bell peppers, and minced garlic. Cook until softened (3-4 minutes).
  4. Add diced tomatoes with their juices; simmer for 2 minutes.
  5. Pour in rice, chicken broth, and Cajun seasoning. Bring to a boil, then reduce heat to low. Cover tightly and cook for 20 minutes.
  6. In the last 5 minutes of cooking, gently fold in shrimp until pink and opaque. Fluff with a fork before serving.
