  • 1 cup shredded cheese (cheddar or your choice)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an oven-safe baking dish with cooking spray.
  2. In a large bowl, combine salsa, black beans, corn, lime juice, and cilantro until mixed well.
  3. Season chicken breasts with salt and pepper and place them in the prepared baking dish.
  4. Pour the salsa mixture evenly over the chicken.
  5. Bake uncovered for 30-35 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  6. About five minutes before serving, sprinkle shredded cheese over the top and return to oven until melted.
  7. Let rest for a few minutes before serving; top with diced avocado if desired.
