  • 1 lb lean ground beef
  • 3 cups thick tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup low-sodium tomato sauce
  • 1 cup chopped bell peppers (mixed colors)
  • 2 tbsp taco seasoning
  • ½ cup sour cream (for serving)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, brown the ground beef until crumbly and cooked through.
  3. Add chopped bell peppers and taco seasoning; stir in tomato sauce and simmer for five minutes.
  4. Layer half of the tortilla chips in the baking dish, followed by half of the beef mixture and half of the cheese.
  5. Repeat layers with remaining ingredients and top with the last of the cheese.
  6. Bake for 20-25 minutes or until bubbly and golden brown. Allow to cool slightly before serving.
