  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 cup milk (whole or low-fat)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp butter or oil (for cooking)

Instructions

  1. In a mixing bowl, blend cottage cheese, eggs, and milk until smooth with visible curds.
  2. In another bowl, whisk together flour, baking powder, salt, and sugar (if using). Fold the dry ingredients into the wet mixture until just combined.
  3. Preheat a skillet over medium heat and add butter or oil until melted.
  4. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 3 minutes).
  5. Flip and cook for another 2-3 minutes until golden brown. Keep warm in a low oven while repeating with remaining batter.
  6. Serve warm with your favorite toppings.
