  • 2 stalks celery, diced

  • 28 oz canned whole tomatoes (with juice)
  • 6 cups low-sodium vegetable broth
  • 1 cup green beans, trimmed and chopped
  • 1 medium zucchini, diced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 cup small pasta (e.g., ditalini)
  • 2 cups spinach or kale
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onion, carrots, and celery until softened (about 5 minutes).
  2. Add minced garlic; cook for an additional 30 seconds until fragrant.
  3. Stir in canned tomatoes with juice, breaking them up gently.
  4. Pour in vegetable broth along with thyme and oregano. Bring to a gentle boil.
  5. Add green beans, zucchini, kidney beans, and pasta; simmer uncovered until pasta is al dente (10-12 minutes).
  6. Fold in spinach or kale just before serving until wilted. Adjust seasoning with salt and pepper.
