  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes with juice
  • 4 cups low-sodium vegetable broth
  • 1 can (15 oz) cannellini or kidney beans, rinsed and drained
  • 1 cup ditalini pasta
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion, carrots, and celery; sauté for about 5 minutes until softened.
  2. Stir in minced garlic and cook until fragrant. Add canned tomatoes with their juices and simmer for a few minutes.
  3. Pour in vegetable broth and add rinsed beans. Bring to a boil while stirring occasionally.
  4. Mix in ditalini pasta along with oregano and thyme; cook according to package instructions until al dente.
  5. Remove from heat and stir in grated Parmesan cheese until melted. Serve hot.
