  • 2 filet mignon steaks (1.5 inches thick)
  • 1 tsp coarse salt
  • 1/2 tsp freshly ground black pepper
  • 2 tbsp olive oil
  • 2 cloves fresh garlic, crushed
  • 2 sprigs fresh thyme or rosemary
  • 2 tbsp unsalted butter

Instructions

  1. Preheat a skillet over medium-high heat until hot enough to sizzle water.
  2. Season both sides of the filet mignon generously with salt and pepper.
  3. Add olive oil to the pan, then place the steaks in and sear without moving for 4-5 minutes until browned.
  4. During the last minute of cooking on one side, add crushed garlic and herbs around the steaks.
  5. Flip the filets carefully, add butter, and baste with melted butter while cooking for another 4-5 minutes for medium-rare.
  6. Remove from heat and let rest covered loosely with foil for about 5 minutes before serving.
