  • 8 oz fettuccine or penne pasta
  • 5 oz Boursin cheese (garlic & herb recommended)
  • 2 cups fresh spinach
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • ¼ cup grated Parmesan cheese
  • 2 tbsp pine nuts (optional)

Instructions

  1. Cook the pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and reserve ½ cup of pasta water.
  2. Sauté garlic and spinach: In a skillet over medium heat, add olive oil and minced garlic. Sauté until fragrant (about 1 minute), then add fresh spinach. Stir until wilted.
  3. Add Boursin cheese: Reduce heat to medium-low, stir in the Boursin cheese until melted and creamy. If too thick, add reserved pasta water gradually.
  4. Combine: Toss the cooked pasta and halved cherry tomatoes into the skillet with the cheese mixture until well coated.
  5. Finish: Sprinkle freshly grated Parmesan on top while tossing again. Adjust seasoning with salt and pepper.
