  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar (light)
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup whole milk (or almond/oat milk)
  • 1/2 cup unsalted butter (melted and slightly cooled)
  • 1 cup diced apples (Granny Smith preferred)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 375°F (190°C) and grease or line a muffin tin.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, granulated sugar, brown sugar, and salt.
  3. In another bowl, beat eggs and mix in milk, melted butter, and vanilla until well combined.
  4. Fold the diced apples into the wet mixture.
  5. Gradually add the dry ingredients to the wet mixture while stirring gently until just combined.
  6. Spoon batter into muffin tins, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
