  • 1/2 cup unsalted butter (cold, cubed)
  • 1/4 cup granulated sugar
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 3 cups tart apples (peeled and sliced; Granny Smith recommended)
  • 1 tbsp lemon juice
  • 1 egg (for egg wash)

Instructions

  1. Prepare the Dough: In a bowl, mix flour and salt. Cut in cold butter until crumbly. Gradually add ice water until dough forms. Chill for at least 30 minutes.
  2. Make the Filling: Toss sliced apples with sugar, cinnamon, and lemon juice; let sit for 10 minutes.
  3. Roll Out the Dough: On a floured surface, roll out chilled dough to about 1/8 inch thick. Cut circles using a biscuit cutter (6 inches in diameter).
  4. Fill and Seal: Place one tablespoon of apple filling on half of each circle. Fold over and crimp edges to seal.
  5. Bake: Preheat oven to 375°F (190°C). Brush pies with egg wash and bake for 25–30 minutes until golden brown.
