  • 1 whole turkey (1214 pounds, thawed)
  • 1/4 cup extra virgin olive oil
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 3 sprigs fresh sage
  • 6 garlic cloves, minced
  • 2 cups celery, chopped
  • 2 cups carrots, chopped
  • 2 cups low-sodium chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F (165°C) and prepare your roasting pan.
  2. Pat the turkey dry with paper towels and rub with olive oil.
  3. Season generously with salt and pepper inside and out; add minced garlic and herbs under the skin.
  4. Stuff the cavity with chopped celery, carrots, and herb stems.
  5. Place turkey breast-side up in the roasting pan; roast for approximately 13-15 minutes per pound until the internal temperature reaches 165°F (75°C).
  6. Baste every 30 minutes with chicken broth from the pan.
