Ingredients

Scale
  • 1 lb lean ground beef
  • 8 oz fresh mushrooms (sliced)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 cups low-sodium beef broth
  • 1 cup full-fat sour cream
  • 8 oz egg noodles
  • 2 tbsp flour
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Cook the noodles according to package instructions; drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.
  3. Add chopped onions and minced garlic; cook until onions are translucent.
  4. Stir in sliced mushrooms and paprika; cook until mushrooms soften (about 5–7 minutes). Season with salt and pepper.
  5. Sprinkle flour over the mixture while stirring to create a roux. Gradually add beef broth, mixing well to avoid lumps; simmer until slightly thickened.
  6. Reduce heat to low, stir in sour cream until fully combined (do not boil).
  7. Add cooked noodles to the skillet, mixing gently to coat with the sauce; warm through for about 3 minutes before serving.
