  • 2 cups cooked rice (white or brown)
  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup salsa (mild or spicy)
  • 2 cups shredded cheddar cheese
  • 2 cups tortilla chips
  • 1 tsp chili powder
  • 1 tsp cumin
  • 2 green onions, chopped
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground meat until browned. Add chili powder and cumin; stir well.
  3. Stir in black beans and diced tomatoes, simmer for 5 minutes.
  4. In a baking dish, layer half of the tortilla chips, half of the meat mixture, and half of the cheese. Repeat layers.
  5. Bake for 25-30 minutes until bubbling and golden brown. Let cool slightly before serving.
