Instructions

  1. Preheat your oven to 350°F (175°C). Fit the pie crust into a pie dish and prick holes in the bottom to prevent bubbling.
  2. Bake the crust for 10-15 minutes until lightly golden. Remove and let cool.
  3. In a saucepan over medium heat, melt the butter. Stir in sugar and flour until combined.
  4. Gradually whisk in the milk while stirring continuously until smooth. Remove from heat and allow to cool slightly before adding egg yolks.
  5. Mix in vanilla extract until fully incorporated.
  6. Pour the butterscotch filling into the cooled pie crust and smooth the top.
  7. Bake for another 25-30 minutes until set; it should jiggle slightly when done.
  8. Cool completely before slicing and serving.
