  • 1 lb large shrimp, peeled and deveined
  • 2 ripe tomatoes, chopped
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, sliced
  • 1/4 cup fresh cilantro, chopped
  • 4 cups fish stock or water
  • 2 tbsp fresh lime juice
  • 1 tsp chili powder (optional)
  • 2 tbsp olive oil
  • Salt to taste

Instructions

  1. Prepare your ingredients by chopping tomatoes, onions, garlic, carrots, and cilantro.
  2. In a large pot, heat olive oil over medium heat. Sauté onions and garlic for 3-4 minutes until golden brown.
  3. Add chopped tomatoes and carrots to the pot. Cook for another 5 minutes until softened.
  4. Pour in fish stock or water; bring to a gentle simmer while scraping any bits from the bottom of the pot.
  5. Stir in shrimp, cooking until they turn pink (about 3-5 minutes).
  6. Squeeze in lime juice and season with salt and optional chili powder to taste.
  7. Ladle into bowls and garnish with fresh cilantro before serving.
